Preparation
Step 1
Prepare the ingredients. Use any homemade or store-bought jam you like; cherry jam works especially well. Adjust the amount of sugar according to the sweetness of the jam.
Step 2
Place the jam in a saucepan and pour in cold water. Use neutral-tasting filtered or bottled water if possible.
Step 3
Place the saucepan over medium heat and bring to a boil. As soon as it boils, remove from the heat and let the mixture cool slightly.
Step 4
Press the mixture through a sieve together with the liquid. Add sugar and lemon juice to taste and stir. If the jam is already quite tart, you can omit the lemon juice and add a little more sugar instead.
Step 5
Pour some of the liquid into a glass and mix in 2–3 tablespoons potato starch until smooth, depending on how thick you want the kissel. If using cornstarch, use about 1½ times as much.
Step 6
Return the saucepan to medium heat and bring the remaining liquid back to a boil. While stirring constantly, pour in the starch mixture in a thin stream. Cook, stirring continuously, until the kissel reaches the desired thickness.
Step 7
Cover and let the finished kissel cool. Pour into glasses and serve.
