Homemade Honey Cookies

Step 1
How do you bake honey cookies at home? Prepare all the necessary ingredients for the cookies. Use high-quality all-purpose flour. If your honey is sweet, for example floral or linden, use baking powder as indicated in the recipe. If the honey has a slight bitterness, for example chestnut or eucalyptus, replace the baking powder with baking soda. Instead of the baking powder and regular flour, you can use the same amount of self-rising flour, 190 g, about 1 1/2 cups.

Place the honey, brown sugar, and butter in a saucepan. You can use a little more or a little less honey and sugar according to your taste.
Step 3
Put the saucepan on the stove and heat it over the lowest heat, stirring, until the butter melts. Remove the saucepan with the honey mixture from the heat and let it cool for 5 minutes.
Step 4
In a bowl, combine the flour, baking powder, salt, and cinnamon.

Mix everything with a spoon, or better yet, sift it through a sieve to aerate the flour.
Step 6
Add the cooled honey-butter mixture to the flour and knead a soft, elastic dough. Keep in mind that you may need a little less or a little more flour.

At first the dough will stick to your hands, but as you knead it, it will become less sticky. The finished dough should be very soft and pliable. Try not to add extra flour, otherwise the cookies will not turn out as crumbly and airy as they should.
Step 8
Roll the dough into balls about the size of a walnut or slightly larger. I got 13 balls.
Step 9
Place the dough balls on a baking sheet lined with parchment paper, leaving a little space between them. Flatten the balls slightly with your hands or with the patterned bottom of a glass. I made small holes in the cookies using a wooden citrus juicer.
Step 10
Place the baking sheet with the cookies into an oven preheated to 200°C (400°F) on the middle rack for 5-7 minutes. The time and temperature may vary in your oven. The main thing is not to overdry the cookies, so do not go far from the oven. At the same time, check that they are not burning on the bottom. If the cookies stay in the oven too long, they will become hard instead of soft and crumbly. They should brown slightly on top and bottom.
Step 11
If the cookies have browned on the bottom but are still pale on top, leave them for another 5 minutes in the cooling oven, moving the baking sheet to the upper rack. Remove the finished cookies from the oven. Since the baking sheet is still hot, the cookies will continue browning on the bottom. To prevent burning, remove them from the baking sheet.
Step 12
