Homemade Fermented Malt Drink

Preparation
Step 1
Prepare all the required ingredients. Use clean, filtered water. Do not rinse the raisins, as they will help support the fermentation process.
Step 2
Pour 1 cup of water into a small saucepan and heat it to 104°F. Add the malt drink concentrate, sugar and dried yeast to the warm water and mix thoroughly. Fresh yeast can be used instead of dried yeast; approximately 0.7 oz will be needed.
Step 3
Pour the mixture into a 3-quart jar or a large food-safe plastic bottle.
Step 4
Add the unwashed raisins and stir. Pour in the remaining room-temperature water.
Step 5
Place the lid on the jar, but do not tighten it completely, so the carbon dioxide produced during fermentation can escape. A tightly sealed container may build up dangerous pressure. Leave the drink to ferment in a warm, dark place for 10–12 hours.
Step 6
Carefully pour the fermented drink into bottles, taking care not to disturb or transfer the sediment from the bottom. Refrigerate for 8–10 hours. During this time, the drink will settle and the remaining sediment will sink to the bottom.
Step 7
A layer of yeast and malt concentrate sediment will be visible at the bottom of the container.
Step 8
After chilling and settling, carefully pour the drink without disturbing the sediment. Serve well chilled.
