Preparation
Step 1
Prepare the ingredients. You can use any dried fruits you like, such as dried apricots or figs. Feel free to add different nuts or seeds according to your preference.
Step 2
Rinse the dried fruits thoroughly to remove any dust or impurities. Cover them with hot water and leave for 10–15 minutes to soften. Drain well and pat dry with paper towels.
Step 3
Cut the dried fruits into smaller pieces and process them in a blender, working in batches if necessary. If your blender is large and powerful enough, you can blend all the dried fruits at once.
Step 4
Place the seed mixture and shredded coconut in the blender and process until finely chopped. The mixture can include sunflower seeds, flaxseeds, pumpkin seeds and sesame seeds.
Step 5
Combine the dates, prunes, raisins, ground seed and coconut mixture, cocoa powder, cinnamon and honey in a bowl. Mix thoroughly with a spoon. For a smoother texture, blend the entire mixture with an immersion blender.
Step 6
With damp hands, shape the mixture into bite-sized balls. Leave them plain or roll them in cocoa powder, shredded coconut or sesame seeds. If desired, toast the sesame seeds beforehand until golden.
Step 7
Arrange the energy bites on a board or tray lined with plastic wrap or parchment paper. Refrigerate for a couple of hours to firm up.
Step 8
Serve the chilled dried fruit energy bites with tea or as a sweet snack.
