Homemade Chocolate Made with Cocoa Butter

Step 1
How do you make homemade chocolate from cocoa butter? You only need three ingredients: cocoa butter, cocoa powder, and powdered sugar. Cocoa butter should have a characteristic cocoa fruit aroma and a slightly creamy color. It won’t melt at room temperature like regular butter. Sift the cocoa powder through a fine sieve.
Step 2
Choose natural cocoa powder without additives, with at least 15% fat content, and a flavor like dark chocolate. High-quality cocoa is what gives that intense chocolate taste. Regular store cocoa often contains sugar and is low-fat, so it won’t work well here. Instead of cocoa powder, you can use cocoa mass (cocoa liquor) in drops or chunks (chop chunks first so they melt faster).
Step 3
All utensils must be completely dry, otherwise the chocolate can seize. Melt the cocoa butter together with the cocoa powder in a small bowl over a double boiler. Do not cook chocolate directly over heat - it doesn’t tolerate overheating. Cocoa butter starts melting at about 38°C (100°F).
Step 4
Then add the powdered sugar. Instead of powdered sugar, you can sweeten with the same amount of honey (it should be liquid and runny), sugar syrup, or cane sugar. You can experiment a bit with sweetness - the flavor will change each time. After adding powdered sugar, keep the chocolate on the double boiler for quite a long time - about 30 minutes - stirring slowly.
Step 5
The long heating is needed so the powdered sugar fully melts. The finished chocolate will be fairly liquid. At this stage you can add mix-ins such as raisins, nuts, sesame seeds, candied fruit, cinnamon, dried fruit, etc.
Step 6
Pour the finished chocolate into prepared molds and place in the refrigerator to set. Silicone molds are ideal - no greasing needed. Once set, the chocolate comes out very easily.
Step 7
Homemade cocoa butter chocolate is ready! Remove it from the molds and enjoy.
