Homemade Cheesecake with Orange Zest

Preparation
Step 1
Crust. First, grind the cookies in a blender into fine crumbs.
Step 2
Put the butter from the refrigerator into the microwave for 30 seconds so it melts.
Step 3
At the beginning, it is best to mix all the dry ingredients: cookies, sugar, cocoa, and orange zest.
Step 4
Add the butter to the dry mixture. Mix thoroughly. If the mixture seems dry, you can add a small amount of heavy cream. The finished mixture should resemble modeling clay. Place it in a baking pan and spread it in an even layer over the bottom and sides. To let the mixture firm up, place it in the refrigerator.
Step 5
Filling. Meanwhile, prepare the filling. Add a pinch of salt to the eggs and beat them until smooth.
Step 6
Next, blend the mascarpone, remaining sugar, vanilla powder, and eggs in a blender. The main thing is not to overdo it, so the mascarpone does not turn into butter.
Step 7
While we were preparing the filling, the crust firmed up. Now spread the filling over the crust and sprinkle chopped white chocolate on top. Place the cheesecake in the oven for 30 minutes at 180°C / 356°F. But that is not all: after 30 minutes, turn off the oven and leave the cheesecake inside to cool for 1 hour.
