Homemade Armenian Flatbread
Thin, soft, affordable and even tastier than store-bought! Homemade Armenian flatbread is very easy to prepare, even for beginners. It requires only a few simple ingredients commonly found in most kitchens.

Preparation
Step 1
Prepare all the required ingredients.
Step 2
Add the salt to the hot water and stir until the crystals dissolve completely.
Step 3
Sift the flour into a deep bowl and make a well in the center. You may need slightly more or less flour depending on its properties, so adjust the amount according to the consistency of the dough.
Step 4
Pour the hot salted water and vegetable oil into the well.
Step 5
Knead the dough. It will be quite firm at first but will gradually become softer and more pliable. Knead for about 15–20 minutes.
Step 6
Cover the dough with a towel and leave it to rest for 30 minutes.
Step 7
Divide the dough into 4–5 equal pieces and shape each one into a ball. Keep the dough balls covered with a towel so they do not dry out.
Step 8
Lightly dust the work surface with flour. Roll each dough ball into a very thin circle approximately the same diameter as the frying pan.
Step 9
Cook each flatbread in a hot, dry frying pan over low heat. Cook the first side until golden-brown spots appear, then turn it over. The second side cooks much faster, so watch it carefully.
Step 10
Transfer each cooked flatbread to a plate, lightly sprinkle it with water and cover with a towel. This will keep the thin Armenian flatbreads soft and flexible.
