Herring Under a Fur Coat with Egg

Step 1
How do you make herring under a fur coat with egg? Prepare the ingredients. You can use ready-made herring fillets, which will be faster and more convenient. Rinse the vegetables well. Then boil the beets and potatoes in separate pots in boiling water until tender. Potatoes usually take about 15-20 minutes. Beets take about 1-1.5 hours, depending on their size. Check for doneness with a sharp knife - it should go into the vegetables easily.
Step 2
Hard-boil the eggs as well. To prevent them from cracking during cooking, place them in cold water and cook over low heat. Boil the eggs for 9 minutes after the water comes to a boil, then cover them with cold water and let them cool. The sudden temperature change helps the shells peel more easily. Cool the eggs, potatoes, and beets, then peel them.
Step 3
Peel the onion, rinse it in cold water, and chop it finely. Place the chopped onion in a deep plate and pour 9% vinegar over it. Leave the onion to marinate for 10-15 minutes. Then drain off the vinegar and rinse the onion once in cold water. Marinated onion gives the finished salad a distinctive flavor and aroma. But you can also use the onion right away without marinating it.

Herring under a fur coat is traditionally assembled in layers. I will use a food ring. A ring 18–20 cm wide, about 7–8 inches, will work well. If you do not have one, you can assemble the salad in a deep salad bowl, simply layering the ingredients one after another. Grate the potatoes on a coarse grater and spread them as the first layer on the bottom of the mold. Press them down slightly with a tamper or spoon. Spread a small amount of mayonnaise over the potato layer.
Step 5
Chop the herring fillet finely. If you have a whole fish, first gut it and fillet it. How do you properly fillet a whole fish? Remove the tail, head, and fins. Cut along the backbone down to the spine. Turn the fish onto its side. Using a sharp knife, cut the flesh away from the backbone. Turn the fish over and remove the fillet from the other side. Clean the inside, removing the black membrane, because it tastes bitter and will spoil the flavor. Rinse and dry well.
Step 6
Spread the chopped herring as the next layer. Sprinkle a little of the marinated onion over the herring. Again, spread with mayonnaise.
Step 7
Separate the hard-boiled eggs into whites and yolks. Grate the whites on a coarse grater and spread them as the next layer, pressing them down slightly. Spread this layer with a small amount of mayonnaise as well.
Step 8
Grate the boiled beets on a coarse grater and spread them as the next layer. Press down lightly. Spread with mayonnaise.
Step 9
Sprinkle the top of the salad with egg yolks grated on a fine grater. Remove the finished salad from the mold and chill it slightly in the refrigerator before serving.
