Preparation
Step 1
Preheat the oven to 240C.
Step 2
Peele the potatoes and cut them into thick chips.
Step 3
Boil the chips in lightly salted water for 4 minutes before draining thoroughly in a colander. Once they are cool enough to handle, transfer them to a baking tray and drizzle with the oil. Toss to ensure each chip is coated, then spread them out in a single layer and season with salt and pepper.
Step 4
Bake for 20 minutes, remove the tray to turn the chips, season again, and return to the oven for a further 15 minutes, or until they are crisp and golden.
