Step 1
How to make healthy pancakes with rice flour? Prepare the ingredients. Following mindful-eating principles, we’ll reduce calories as much as possible: use low-fat kefir, skip sugar, and don’t use oil for frying. Don’t replace baking soda with baking powder if you follow a gluten-free diet - many baking powders contain wheat flour.
Step 2
Take the kefir out of the fridge ahead of time or warm it until lukewarm. Add baking soda and stir. A reaction between the base and the acid will release carbon dioxide - this makes the pancakes fluffy. The reaction starts faster in warm kefir, which is why we warm it. Let the kefir sit for 5 minutes.
Step 3
Crack the egg into the kefir, add salt, and mix.
Step 4
Add the rice flour in portions, stirring after each addition. The batter will become thick and smooth. You can start cooking right away - there’s no need to wait for gluten to develop as with wheat flour. Rice flour doesn’t contain gluten.
Step 5
Heat a skillet over medium heat. Use a nonstick skillet, since we’ll be frying without oil. Spoon the batter onto the skillet with a tablespoon, forming small pancakes.
Step 6
Fry the pancakes on both sides until golden brown. Serve hot. If you like, drizzle with honey or a sugar substitute syrup - maple, agave, or Jerusalem artichoke syrup.
