Step 1
Place the yoghurt, lemon juice, mustard and herbs into a large bowl and whisk thoroughly until everything is well combined. Season generously with salt and plenty of black pepper.
Step 2
Add the shredded cabbages, red onion and grated carrots, mixing until all the vegetables are fully coated in the mustard dressing.
Step 3
For the best texture and flavour, allow the coleslaw to rest for around 30 minutes before serving so the vegetables soften slightly and absorb the dressing.
