Preparation
Step 1
Preheat the oven to 200C and prepare a six-hole muffin tin either with muffin cases or a light coating of oil.

Combine the flour, sugar, and baking powder in a mixing bowl. In a separate bowl, whisk together the egg, yoghurt, and oil. Create a well in the dry mixture, pour in the wet ingredients, and stir until just combined. Fold in the mashed bananas, being careful not to over-mix the batter.
Step 3
Spoon the mixture evenly into the muffin cases and bake for 20-30 minutes, or until a skewer inserted into a muffin emerges clean. Once removed from the oven, transfer the muffins to a wire rack to cool.
