Healthy Baked Fish Patties (Oven)
Golden and juicy, tender and simple - very tasty! These oven-baked fish patties use minimal ingredients but two kinds of fish for great flavor. Red fish adds moisture and richness, while white fish helps them keep their shape on the baking sheet.

Step 1
How to bake fish patties in the oven on a baking sheet: prepare the needed ingredients. You can use one type of fish - white or red - but I still recommend mixing different kinds. I used fresh trout fillet and frozen flounder fillet. You can use other combinations too, for example pink salmon and cod, etc.
Step 2
Rinse the fish fillet thoroughly, squeeze out excess moisture, and remove small and large bones with tweezers if there are any. If the fillet is frozen, thaw it first and squeeze out excess water. Cut the fillet into small pieces.
Step 3
Put the prepared fish into a blender bowl and grind it. Instead of a blender, you can chop the fish very finely with a regular knife. The mixed mince looks pale orange and smooth.
Step 4
Rinse the parsley, pat it dry, and finely chop it. You can use dill instead of parsley or in addition.
Step 5
Transfer the fish mince to a bowl, add the egg, tomato paste, spices, and the chopped herbs. Mix thoroughly until smooth. If you’re using a ready-made spice blend, read the ingredients on the package - these blends often already contain salt and pepper. Keep that in mind so you don’t oversalt or overpepper the dish.
Step 6
If the mixture is too runny and won’t hold its shape, add 2-3 tbsp semolina or flour, mix, and let it rest for about 10 minutes so it thickens.
Step 7
The finished mixture should be tender and not runny, and the patties should keep their shape and not spread.
Step 8
With wet hands, form medium-size patties. If you like, coat them on all sides in breadcrumbs or semolina. Place the patties on a foil-lined baking sheet brushed with vegetable oil, spacing them apart. Bake in a preheated oven at 180°C (356°F) for 25-30 minutes. Adjust the time and temperature to your oven.

Transfer the cooked patties to a plate and serve. Enjoy your meal!
