How to make healthy cottage cheese muffins? Prepare the necessary ingredients. Use cottage cheese with 2-5% fat - this is the most suitable range for healthier baking. You can use any dried fruit (dried apricots, prunes). If the dried fruit isn’t sweet enough, add any sweetener if desired.

Rinse the raisins well, cover with cold water for 5 minutes to soften. Drain and pat the raisins dry.

If the cottage cheese is grainy, rub it through a sieve or blend with an immersion blender until smooth and creamy. In this case, it’s convenient to use packaged cottage cheese, which has a smoother texture.

Chop the nuts with a knife. Choose the size you like - leave larger pieces or chop into fine crumbs.

In a bowl, whisk the eggs until uniform.

Add the smooth cottage cheese and mix thoroughly until there are no lumps.

Pour in the milk and mix.

In a wide bowl, combine the dry ingredients: corn flour, rice flour, baking powder, and vanilla. Mix, then sift through a sieve to aerate the flour - this will make the muffins more porous.

Add the sifted dry mixture to the batter and mix.

Add the raisins and chopped nuts; mix.

The batter will be sticky and fairly thick.

Spoon the batter into individual molds, filling them 2/3 full, since the muffins will rise while baking. If desired, sprinkle the tops with peanut flakes. Instead of small muffins, you can bake one large cake.

Bake in a preheated oven at 180°C (356°F) for 25 minutes, until golden. Don’t overbake, or the crust will be too dry.
