Grilled Zucchini
Summery in flavor and beautiful in presentation. Grilled zucchini makes an excellent side dish for meat or chicken, works perfectly as an appetizer, and looks wonderful on the table even as a dish on its own.

Preparation
Step 1
First decide how you want to cut the zucchini. Based on that, choose the right zucchini. If you plan to cook it in rounds, use a longer and thinner zucchini. You will get nice slices that can be eaten in one bite. If you plan to grill it in long pieces, choose a thicker zucchini, because it will look better on the serving dish. Wash the zucchini and dry it well with a towel.
Step 2
Cut the clean zucchini into rounds or long slices about 0.5-0.7 cm thick, about 1/4 inch. Do not cut the vegetable too thick, because it may not cook through inside, but do not cut it too thin either, because it may lose its shape.
Step 3
Start heating the grill, and meanwhile season the sliced zucchini with salt and pepper to taste. To help the seasonings stick better to the zucchini pieces, gently pat them on top with your palm or fingers. Turn the pieces over and repeat the seasoning with salt and pepper on the other side. Do everything quickly so the zucchini does not have time to release its juice.
Step 4
When the grill surface is well heated, brush it with olive oil using a silicone brush, place the rounds or long slices on it, and grill.
Step 5
Grill the zucchini on both sides for 2-3 minutes, until beautiful golden grill marks appear. Since all grills work with different heat levels and cook differently, the cooking time may vary. The main thing is not to cook the zucchini until soft, because it tastes better when quickly grilled.
Step 6
Place the grilled zucchini on a plate or serving dish. It does not need any extra decoration, fresh herbs are enough, so it can already be served. But I prefer to serve it with a sauce made of sour cream, garlic, and finely chopped dill, or by placing a little sour cream, finely chopped garlic, and dill in the center of each round. Try it, it turns out very tasty.
