Grilled Vegetable Skewers on the Charcoal Grill

Preparation
Step 1
For these skewers, you can use any vegetables you have on hand. Wash everything thoroughly and pat dry with paper towels or a clean cloth. Use small bell peppers and young, tender zucchini for best results.
Step 2
Peel the onion. Slice the eggplant and onion into rings about 1.5-2 cm (½-¾ inch) thick. Cut the zucchini into evenly sized pieces.
Step 3
Poke small holes in the zucchini and bell peppers with a toothpick - this helps them absorb the marinade better.
Step 4
Place all vegetables except the onion into a plastic bag. Marinate the onion separately so the rings don’t fall apart (I usually brush both sides with marinade using a silicone brush).
Step 5
Prepare the marinade: in a small bowl, combine vegetable or olive oil, the juice of half a lemon, salt to taste, and your favorite spices. I used smoked paprika, pepper mix, dried basil, garlic powder, and Provencal herbs.

Mix thoroughly until the salt crystals are fully dissolved.

Pour the marinade into the bag with the vegetables. Gently mix so that the oil coats all the pieces evenly. Seal the bag and let it marinate while you prepare the charcoal grill. When the fire burns down and hot coals remain, you can begin grilling.

Thread the vegetables onto skewers, alternating different types for a bright and colorful look.

Place the skewers over the coals - vegetables cook very quickly.

Turn the skewers occasionally to grill them evenly on all sides. Cooking takes about 7-10 minutes, depending on the heat of the coals and the size of the vegetables.

Once ready, serve as a standalone dish.
