Grilled Pork Steak in a Grill Pan
Appetizing, juicy, insanely tasty, perfect for dinner! A steak in a grill pan can be considered fairly light. As the meat fries, the fat runs down between the grill ridges instead of soaking back in. The steak turns out juicy but not greasy, with a beautiful grid from the pan.

Step 1
How to fry a steak in a grill pan? Prepare the ingredients. Take the meat steaks out of the fridge in advance so they can warm to room temperature. For this recipe it’s best to use fresh, not previously frozen meat, otherwise the cooked steak may turn out dry. The steak should be 2-4 cm thick and have a small fat layer.

In a separate bowl mix together the marinade: cognac, soy sauce, salt and spices.

Rub the meat on all sides with the marinade and leave to marinate for 1-2 hours.

Then pat the meat thoroughly with paper towels to remove all excess liquid from the surface. It’s important to do this as carefully as possible: extra moisture will prevent the steak from frying and it will start to stew instead.
Step 5
Brush the meat on both sides with vegetable oil.
Step 6
Prepare the grill pan. Heat it until very hot and, using a silicone brush, grease the whole surface with vegetable oil.
Step 7
Lay the steaks on the hot pan so they do not touch each other. Let them sear for 1 minute over high heat.
Step 8
Then turn them over with tongs and sear for another minute on the other side so a crust forms. After that, reduce the heat and fry for another 2 minutes on each side.
Step 9
Then turn off the heat and remove the meat from the pan. Wrap it in foil or cover with a lid. Let the steak “rest” for about 5 minutes. During this time the juices will redistribute inside the whole piece, the temperature outside and inside will even out, and the steak will become uniformly warm, juicy and tender. The finished meat is very juicy and soft. When serving, spoon the released juices over the steak. Enjoy your meal!
