Grilled Pangasius in a Grill Pan with Sautéed Vegetables

Step 1
How to make pangasius fillet in a grill pan with sautéed vegetables? First, prep the fish. Take the pangasius out of the freezer and leave it at room temperature until fully thawed. To speed it up, you can cover the fillet with cool water. Change the water a couple of times within a short period - this will thaw it much faster.
Step 2
Pat the thawed pangasius dry with paper towels or a kitchen towel. The fish should be as dry as possible, because we’ll be pan-searing it next.
Step 3
Cut the fillet in half, or leave it whole - whichever you prefer.
Step 4
Lightly salt each piece on all sides and sprinkle with a small amount of your favorite spices (I used ground peppers and just a little dried basil).
Step 5
Using a silicone brush, grease the grill pan with vegetable oil, place it on the stove, and heat it well. Sear the fish on both sides until a golden, appetizing crust forms. I cooked over medium heat and it took about 3-4 minutes per side. Remove the cooked pieces from the pan.
Step 6
Peel the onion and garlic. Cut the pepper in half and remove the stem and seeds. Rinse the vegetables and herbs under running water and pat dry with paper towels. Melt butter in the grill pan and add the onion, pepper, garlic, and herbs to cook. Choose your preferred doneness: you can lightly sauté the vegetables or cook them until golden.
Step 7
Spoon a small amount of the sautéed vegetables onto each piece of fish. If you like, drizzle with a few drops of lemon juice.

Serve while the dish is still hot!
