Grilled Fish Skewers over Charcoal
You could hardly think of a better hot dish for a picnic! Grilled Fish Skewers over Charcoal in a kefir marinade with lemon juice and onion rings are much easier to prepare than meat skewers, yet turn out just as good. An ideal choice for outdoor relaxation. Minimum effort, maximum pleasure!

Preparation
Step 1
How do you make the best grilled fish skewers over charcoal? Prepare the ingredients. I use halibut steaks, as this fish is quite fatty and has few bones.
Step 2
Rinse the fish well, pat it dry, and cut into medium-sized pieces.
Step 3
Place the sliced fish in a container for marinating, preferably one with a lid. Lightly salt it if desired.
Step 4
Drizzle the fish with lemon juice, spreading it evenly over the pieces so each piece can soak it up.
Step 5
Pour in the kefir and mix well so it coats each piece.
Step 6
Peel the onion and cut it into rings or half rings. Add the onion to the fish and mix well.
Step 7
Leave the fish to marinate for at least 1 hour at room temperature, covered with a lid.
Step 8
Light the fire and wait until the wood burns down into hot coals.
Step 9
Wash the skewers and heat them over the coals. Thread the pieces of fish onto the skewers and place them over the grill.
Step 10
Grill the fish skewers for about 5 minutes on each side, turning occasionally.
Step 11
Serve the hot grilled fish skewers with fresh lemon slices, herbs, fresh vegetables, flatbread, and a spicy sauce of your choice. Enjoy!
