Grilled Bone-In Pork Steaks on a Charcoal Brazier

Step 1
How do you grill bone-in pork steaks on a charcoal brazier (on a grill grate)? First, prepare all the ingredients you’ll need. The steaks shouldn’t be thin - then they’ll turn out very juicy and tasty. My steaks were at least 3 cm (about 1.2 in) thick. It’s best to use fresh pork that hasn’t been frozen. Rinse the meat and pat dry with paper towels.

Season each steak with salt and pepper. At this stage, you can use your favorite spices or a ready-made barbecue seasoning.
Step 3
Pour red wine over the meat and rub it into the pork pieces.
Step 4
Flip the steaks and do the same on the other side. Massage each piece so the spices and wine are evenly distributed.
Step 5
Add herbs, for example basil, oregano, or parsley. Leave the steaks at room temperature for 1-2 hours.
Step 6
Light the charcoal brazier. Wait until the coals burn down and are covered with a white ash layer. Grease the grill grate with vegetable oil using a sponge or a silicone brush. Place the grate over the coals. Once it’s well heated, lay out the steaks. Grill until a browned, appetizing crust forms.
Step 7
Flip the pork to the other side and cook until done.
