Preparation
Step 1
Prepare the ingredients. Take the butter out of the refrigerator in advance so it softens, and let the eggs come to room temperature. Sift the flour to remove any lumps.
Step 2
Place the softened butter, sugar, sour cream and baking soda in a bowl, then add the eggs.
Step 3
Add the flour. Since different flours absorb liquid differently, you may need slightly more or less than stated, so adjust according to the consistency of the dough.
Step 4
Using a mixer fitted with dough hooks or your hands, knead until you have a thick, elastic dough that is still slightly sticky. Shape it into a ball.
Step 5
Divide the dough into two unequal portions. Reserve about one-quarter for the topping and use the rest for the base. Wrap both portions in plastic wrap or place them in bags and freeze for 1 hour. If you plan to bake later, refrigerate the dough instead.
Step 6
Line a baking sheet with a silicone baking mat or lightly grease it with butter. Remove the larger piece of dough from the freezer and coarsely grate it evenly over the baking sheet, or roll it out to form the base.
Step 7
Spread the jam evenly over the dough. Use any thick sweet-tart jam, preserves or fruit spread; blackcurrant jam works especially well.
Step 8
Remove the smaller piece of dough from the freezer and coarsely grate it over the entire surface. Bake in an oven preheated to 375°F until evenly golden.
Step 9
Remove from the oven and let cool completely. Cut into squares, diamonds, rectangles or triangles and serve with tea, coffee, cocoa or warm milk.
