Ghanaian Egusi and Spinach Stew (Vegan)
A simple, flavourful dish made with ground pumpkin seeds, spiced tomato sauce and fresh spinach, cooked gently for a rich and nourishing meal.

Preparation
Step 1
To make the dish more original, dried watermelon seeds should be used, but they are more difficult to get, so pumpkin seeds are great substitution.
Step 2
Grind the pumpkin seeds in a food processor until they reach a texture similar to ground coffee, then set aside.
Step 3
Place the roughly chopped onions, tomatoes, garlic and chilli into the food processor and blend until you have a roughly textured sauce.
Step 4
Heat the oil in a large pan, add the tomato mixture and cook for 10 minutes. Stir in the ground pumpkin seeds and the chilli powder, then season with salt and pepper to taste.
Step 5
After a few minutes, add the fresh spinach. Cover the pan with a lid and cook gently until the spinach has completely wilted.
