Ghanaian Chicken Wings in Spicy Gravy

Preparation
Step 1
Heat oil in a pot or deep skillet. Season chicken wings with salt and pepper. Add to the hot oil and fry until lightly golden (not fully cooked). Remove and set aside.
Step 2
In the same pan, add chopped onions and sauté until soft. Add grated garlic, grated ginger, and finely chopped chili; cook 1-2 minutes. Stir in tomato paste and cook until slightly darker. Add chopped tomatoes and cook 8-10 minutes until thick.
Step 3
Add curry, paprika, thyme, salt, pepper, and optional stock cube. Return chicken wings to the pan. Add ½-1 cup of water to create gravy. Cover and simmer 20-25 minutes until chicken is cooked and sauce thickens.
Step 4
Serve hot with rice, rried potatoes, bread, couscous or pasta.
