Preparation
Step 1
Prepare all the ingredients and spices needed for making the Georgian-style salad for winter.
Step 2
To make the salad, set a meat grinder with a large grid and grind 2.2 lb (1 kg) of tomatoes into a large enamel basin. Add 2 tablespoons of coarse salt and 4.4 oz (125 g) of sugar.
Step 3
Pour in ½ cup (125 ml) of vegetable oil. Place the basin over high heat and stir until the mixture boils.
Step 4
Reduce the heat to medium and simmer for 10-15 minutes.
Step 5
Press 5 oz (150 g) of garlic through a garlic press into a small bowl, then add it to the simmering tomato mixture.
Step 6
Add 10 g of khmeli-suneli (Georgian spice blend), 1 teaspoon of red hot pepper, 3-4 bay leaves, 10 black peppercorns, and 1 teaspoon of coriander. Stir well.
Step 7
Pour in ½ cup (125 ml) of 9% vinegar, mix everything thoroughly, cover the basin with a lid, and bring the tomato mixture to a boil again over high heat.
Step 8
Add 5.5 lb (2.5 kg) of washed and sliced cucumbers (cut into half-rings) to the boiling tomato mixture.
Step 9
Mix all ingredients and cover with a lid.
Step 10
Once it boils, cook the salad for another 10-15 minutes until the cucumbers are tender.

While still hot, spoon the salad into clean, sterilized jars, filling them to the top.

Seal or screw the sterilized lids tightly onto the jars.

Turn the sealed jars upside down to check for leaks, then wrap them with a warm blanket until completely cooled.

Store the Georgian-style cucumber and tomato salad in a dark, cool place away from heat sources.
