Step 1
How to make garlic mayo sauce with lemon? Prepare the ingredients. The eggs are used raw, so choose the freshest ones from a trusted source. Instead of whole eggs, you can use only yolks - then the sauce will be slightly thicker, richer in flavor, and more creamy in color. Use completely neutral, odorless oil. Even a pleasant oil aroma can spoil the taste of the mayonnaise. Adjust the amount of garlic to taste.

Peel the garlic and press it through a garlic press or finely chop it. Even if you trust your blender, it’s better to do this in advance and not add large pieces to the sauce - because of the large amount of oil, the garlic may not blend well.

Into a blender cup or a deep container convenient for blending, pour the vegetable oil, add the eggs, and the lemon juice.
Step 4
Holding the immersion blender at the bottom of the cup, blend until almost the entire mixture turns white.
Step 5
Add a little salt and pepper and the chopped garlic. Continue blending until you get a fluffy, smooth, white sauce.
Step 6
Transfer the sauce to a glass or ceramic container with a lid. Use immediately or store in the refrigerator for no longer than 1 week. This amount yields about 300 ml (about 1 1/4 cups) of sauce. It’s great for dressing vegetable salads and as a sauce for fish, poultry, and meat. Enjoy your meal!
