Fruit Pie in the Oven

Step 1
Prepare all the listed ingredients. Start with the dough. Use high-grade flour and large eggs. Any milk fat content works. I used brown cane sugar, but regular white sugar is fine too.
Step 2
Sift the flour together with baking powder and salt.
Step 3
In a blender, combine the sifted flour, 7 tbsp (100 g) of cold diced butter, and ¼-⅓ cup (50-70 g) sugar, depending on desired sweetness. Blend until crumbly. You may need slightly more or less flour - adjust by texture.
Step 4
Whisk the eggs with the milk until smooth.
Step 5
Pour the egg mixture into the flour crumbs and mix. The dough will be sticky and elastic.
Step 6
Transfer the dough into a greased 8-9 inch (20-22 cm) deep baking dish and smooth it out. Remember, it will rise during baking, so make sure the sides are tall enough to prevent overflow.
Step 7
Mix the remaining sugar with cinnamon.
Step 8
Melt the remaining butter over low heat or in the microwave.
Step 9
Prepare the fruit filling. I used red plums and pears, but you can also add apples or pitted cherries.
Step 10
Wash the plums, halve them, and remove the pits. Use ripe but firm plums to help them keep their shape. Slice the pear and remove the seeds.
Step 11
Arrange the fruit slices on the dough and gently press them in.
Step 12
Sprinkle the pie with the cinnamon-sugar mixture. You can reduce the sugar amount to taste.
Step 13
Pour the melted butter evenly over the top. Bake in a preheated oven at 350°F (180°C) for 30-40 minutes. Baking time depends on your oven and pie thickness. Tip: place a sheet of foil or parchment under the pan in case the butter bubbles over. Enjoy your dessert!
