Frozen Berry Pie with Almond Flour
Fragrant, tender, and not at all difficult. A delicious berry pie with berries. Thin, tender, crumbly pastry and plenty of filling with the light tartness of cherries and raspberries. Simple, quick, and very tasty. It already tastes like summer. Fragrant, tender, and not at all difficult.

Preparation
Step 1
Ingredients you will need: cold butter with 82% fat content; almond flour and wheat flour; salt and sugar. If the eggs are large, you can use just the yolk. Orange zest is optional.
Step 2
Combine the flour, salt, sugar, and cold butter.
Step 3
Rub everything with your hands into crumbs. You can also use a food processor with a blade attachment.
Step 4
Add the zest, only the colored part, because the white part will be bitter, and the egg, or rather half of it, and quickly knead the dough.

It should turn out pliable, uniform, and non-sticky.
Step 6
Roll the dough out between two sheets of parchment paper or between two Teflon mats to a thickness of 5 mm, about 0.2 inch, and to the required size.

My pan is 21 cm, about 8.3 inches, in diameter and 3 cm, about 1.2 inches, high. Put the dough in the refrigerator for 1 hour to rest and chill.

Then place the chilled dough into the pan, level it out, and put it back into the refrigerator while the filling is being prepared.

Gather the trimmings into a ball, wrap it in a bag, and put it into the freezer.

For the filling, I will use raspberries and cherries in equal proportions, but you can use absolutely any berries, cherries, sweet cherries, raspberries, blueberries, currants, bilberries, either frozen or fresh. If they are frozen, as in my case, place them in a sieve so the juice can drain off. You will also need cornstarch and sugar. Spices are optional. I use cinnamon, nutmeg, and ginger.

Combine everything and mix gently.

And our filling is ready.

Spread it over the chilled dough and level it out.

Grate the frozen ball of dough on top using a coarse grater. Put it into an oven preheated to 170°C (340°F) for 40-45 minutes.

But it is better to judge by your own oven and by a beautiful golden crust. Let it cool completely, then remove it from the pan.

And then you can call everyone for tea. Enjoy your meal. If desired, you can dust the pie with powdered sugar.
