Fried Zucchini with Garlic and Tomatoes

Step 1
How do you make fried zucchini with garlic, tomatoes, and mayonnaise? First, prepare the zucchini. Use medium-sized zucchini, preferably young ones without large seeds. You can use zucchini or courgettes.
Step 2
Wash and dry the zucchini. Trim the ends on both sides. Slice the zucchini lengthwise into thin slices. If the zucchini skin is thin, you can leave it on. If the skin is thick and may make it difficult to roll the zucchini, it is better to remove it. Place the zucchini in a suitably sized bowl, season with salt, and leave for 10 minutes. This will help release excess liquid.
Step 3
Prepare the tomatoes for the filling. Choose medium tomatoes, preferably slightly elongated ones, such as plum tomatoes. Cut the tomatoes into wedges according to the number of zucchini slices.
Step 4
Prepare the necessary ingredients for the sauce. Instead of parsley, you can use any other herbs to taste. If your garlic cloves are large, 1 clove will be enough. You can make mayonnaise yourself. The mayonnaise can be partly or fully replaced with sour cream; the appetizer will have a more delicate flavor.
Step 5
Peel the garlic and press it through a garlic press. Wash and dry the parsley, then chop it finely; the finer, the better. In a small bowl, combine the mayonnaise, pressed garlic, parsley, salt, and pepper.
Step 6
Mix everything thoroughly. The sauce is ready.
Step 7
Drain the liquid released from the zucchini. Coat the zucchini in flour on both sides.
Step 8
Heat the vegetable oil in a pan. Fry the zucchini slices on both sides until golden.
Step 9
Transfer the cooked zucchini to a paper towel to remove excess fat. Let the zucchini cool.
Step 10
Spread each zucchini slice with the sauce. Place a tomato wedge on top. Roll the zucchini into small rolls.
Step 11
Place the finished appetizer upright on a serving dish and decorate with parsley. Enjoy!
