Fried Potatoes with Honey Mushrooms in a Skillet
Very tasty, very simple, and satisfying - a perfect everyday dish. A skillet of fried potatoes with honey mushrooms is irresistible: it’s hard to stop eating! The dish is easy to cook, even for a beginner. Honey mushrooms can be replaced with any other mushrooms.

Preparation
Step 1
I used store-bought honey mushrooms, previously frozen. They must be thawed in advance. If your mushrooms are foraged, clean and rinse them first.
Step 2
Pour salted water over the mushrooms and bring to a boil. Salt keeps the mushrooms from turning gray. Boil for 20 minutes, skimming off any foam. Drain in a colander and rinse with cold water.
Step 3
Peel the onion, rinse, and slice thinly.
Step 4
Heat a little vegetable oil in a skillet until hot. Add the sliced onion and sauté for a couple of minutes until aromatic.
Step 5
Add the boiled honey mushrooms to the onion. Mix and fry together for 3-5 minutes to let excess moisture evaporate.
Step 6
Peel the potatoes, rinse off any dirt, slice into thin sticks, and rinse again in cold water. This removes excess starch so the potatoes won’t fall apart during frying. Drain all water.
Step 7
Add the drained potatoes to the skillet and fry together with the mushrooms over low heat for 15–20 minutes. Stir occasionally to prevent burning. If you want crispier potatoes, cook without a lid.
Step 8
When the potatoes are soft, season with a little salt. Enjoy!
