Fried Pies in Oil with Water-Based Dough
Fluffy, golden and so tasty! All the neighbors will come running! Making fried pies in oil with water-based dough is not as difficult as it may seem at first glance. Use absolutely any filling - whatever you have in the fridge: cabbage, onion with egg, jam, fruit, berries, or cottage cheese with herbs.

Step 1
How to make fried pies in oil with water-based dough? First, wash and peel the potatoes.
Step 2
Boil the potatoes in salted water until tender.
Step 3
Make mashed potatoes from the potatoes, drain the potato cooking water and let this liquid cool slightly.
Step 4
Prepare the necessary ingredients for the dough. If you have less potato broth than needed, add a little water. If you are using a different filling, replace the broth with warm water or a mixture of milk and water (50:50).
Step 5
In the warm potato broth dissolve the sugar and salt.
Step 6
Mix the dry yeast with the flour. I almost always use dry yeast - it significantly saves preparation time. Be sure to sift the flour. This saturates it with oxygen and the finished dough will be softer and fluffier.
Step 7
Combine the dry and liquid ingredients and knead the dough, kneading it well for 10-15 minutes. At this stage I often use a bread maker.
Step 8
The dough should be smooth and elastic, pleasant to work with. If necessary, add a little more flour. If the dough turns out too stiff, pour in a bit of water.
Step 9
Cover the bowl with the dough with a towel and leave it in a warm place for 1 hour.
Step 10
Prepare the necessary ingredients for the filling. I use pork mixed with beef, but any meat will do here - chicken or even liver. First, pass the meat through a meat grinder.

Peel the onion and chop it finely.
Step 12
Fry the onion in vegetable oil until golden.
Step 13
Add the ground meat to the onion, salt and pepper to taste, and fry everything together for about 5 minutes more.

Add the fried meat to the mashed potatoes.

Mix everything thoroughly.

After an hour the dough should have increased in volume.

Divide the dough into small balls, about the size of a chicken egg. From the given amount of ingredients I got 25 pies.

Shape flat patties from the dough balls with your hands.

Put some filling on each dough round.

Pinch the edges together well and form pies. Place them seam side down.
Step 21
Leave the pies under a towel for 10-15 minutes so they rise.
Step 22
Fry the pies in well-heated vegetable oil. The oil should reach about halfway up the pies, be very hot, but must not burn. I fry in an old cast-iron pan - it keeps a higher temperature. The pies rise right before your eyes.

Turn them over and fry on the other side until golden.
