Fried Kefir-Dough Hand Pies with Potato, Onion & Mushrooms (No Yeast)

Preparation
Step 1
Start the filling: chop 300 g (about 10.6 oz) button mushrooms into not-too-large pieces.
Step 2
Put the chopped mushrooms into a skillet set on the stove.
Step 3
Stirring, sauté the mushrooms in a dry skillet over slightly above-medium heat.
Step 4
Boil 600 g (about 1.3 lb) potatoes in a pot until fully cooked.
Step 5
Finely chop 1 onion.
Step 6
Add the chopped onion to the skillet with the mushrooms, then salt to taste.
Step 7
Mix everything and continue sautéing the mushrooms with the onion.
Step 8
Add 50 g (about 3½ Tbsp) butter, then add black pepper to taste and stir.
Step 9
Keep cooking the mushrooms over low heat for about 5 minutes.
Step 10
Mash the boiled potatoes in the pot with a potato masher.
Step 11
Add the sautéed mushrooms from the skillet to the pot with the potatoes.

Mix the potatoes and mushrooms well, then set the filling aside to cool.

Make the dough: put 1 egg yolk into a large bowl, add 1 tsp salt, and mix.

Pour in 400 ml kefir (about 1⅔ cups) at room temperature and mix.

Sift in 500 g wheat flour (about 4 cups, approx.) in parts and add 1 tsp baking soda.

Stir all the ingredients together in the bowl clockwise.

Knead the dough to the needed consistency, then add 3 Tbsp vegetable oil.

Knead thoroughly by hand for about 7 minutes, cover the bowl with a kitchen towel, and let the dough rest for 15 minutes.

Lightly oil your hands and the work surface, place the dough on it, knead briefly, and divide into equal pieces.

Press each piece into a flat round of the desired size.

Place the needed amount of filling onto each round.

Seal the edges well over the filling.

Shape the hand pies as desired.

Pour enough vegetable oil into a skillet and heat it well, then add the hand pies.

Fry on both sides until golden brown.
