Fried Kefir & Baking Soda Hand Pies
The quickest and easiest - also soft, fluffy, and delicious! These fried kefir-and-baking-soda hand pies are handy because the dough doesn’t need to rise. Fillings can be cabbage, potatoes, eggs, rice, jam, fruit preserves, or dulce de leche.

Step 1
How do you make fried kefir-and-baking-soda hand pies in a skillet? Prepare the ingredients. Sift the flour to aerate it. The filling can be anything. I’m making cabbage pies, so I’m preparing everything needed to braise the cabbage.
Step 2
Warm the kefir to room temperature. Add sugar, salt, and baking soda. Mix.
Step 3
Beat in the eggs and add vegetable oil.
Step 4
Gradually add the sifted flour and knead the dough. Use the dough as your guide - the amount of flour may be a little more or less.
Step 5
The finished dough will be soft, pliable, and not sticky. Cover it with plastic wrap and let it rest.
Step 6
Make the filling. Peel the onion and carrot. Chop the onion and grate the carrot on a coarse grater. Sauté the vegetables for 2-3 minutes with vegetable oil.
Step 7
Then add the shredded cabbage. Simmer everything covered for about 20 minutes, until the cabbage is soft. Season with a little salt and spices to taste. To prevent burning, you can add a little water. Let the filling cool.
Step 8
Form small patties from the dough and fill them with the braised cabbage. Shape the pies.
Step 9
Pour vegetable oil into a frying pan and fry the pies over low heat for 1-2 minutes per side. I like frying them in a generous amount of oil.
Step 10
The finished fried pies will turn golden. Transfer them to a bowl and cover with a towel so they can rest and steam a little. Enjoy!
