Fried Eggplant Rolls with Cheese and Tomato

Preparation
Step 1
Prepare the ingredients. You can replace the mayonnaise with sour cream, if desired. Choose any flavorful cheese that grates well and melts slightly into the filling.

Rinse the eggplants thoroughly and cut them lengthwise into thin slices.
Step 3
Arrange the eggplant slices on a plate, sprinkle them with salt and leave for 10 minutes. Rinse off the salt and pat the slices dry with a towel. Young eggplants and some varieties are not bitter, so this step may not always be necessary.
Step 4
Heat the vegetable oil in a frying pan. Cook the eggplant slices on both sides until lightly golden.

Transfer the cooked eggplant to paper towels to absorb the excess oil.
Step 6
To prepare the filling, peel the garlic and pass it through a press.

Finely grate the cheese.

Combine the garlic, grated cheese and mayonnaise in a bowl.

Mix until the filling is smooth and evenly combined.

Rinse the tomatoes thoroughly and cut them into thin wedges.

Spread the cheese filling over each fried eggplant slice. Place a tomato wedge at one end and roll the eggplant tightly around it.

Arrange the eggplant rolls with cheese and tomato on a serving plate. Garnish with fresh herbs, if desired, and serve chilled.
