Fried Chicken Liver in Batter
Very tasty and filling, perfect for dinner for the whole family. Chicken liver fried in batter turns out very crispy on the outside and incredibly juicy inside. The dish is very easy to make, yet it lets you appreciate the taste of chicken liver in a new way.

Step 1
How do you make fried chicken liver in batter? Prepare all the necessary ingredients. Use chilled liver, because it contains more valuable nutrients than frozen liver. Choose a larger egg, preferably farm fresh. The flour can be any kind; I used regular wheat flour. But you can also use less common flours such as rice, buckwheat, or oat flour. Each time you will get a new and original flavor and aroma.

For the batter, mix the flour with salt. For extra flavor, you can add not only salt to the flour, but also dried herbs and seasonings. If you like spicy food, ground pepper, garlic powder, or khmeli-suneli will work well. If you prefer more classic flavors, you can add dried dill, parsley, or herbes de Provence. Mix the flour with the salt and any other additions.

You will also need an egg for the batter. Crack it into a fairly deep bowl and stir it with a fork until smooth. You can check whether the egg is fresh beforehand by placing it in a bowl of room-temperature water: if it sinks, it is fresh. If it floats, it is better not to use it.
Step 4
Rinse the liver well. If necessary, remove the bile ducts, which are usually green in color. These must be cut out and discarded, because they contain bile, and if you cook the liver with them, the dish will taste very bitter. I kept the liver pieces fairly large and hardly cut them at all.
Step 5
Dip each piece of liver into the egg.

Then immediately coat it in the flour. You can repeat the egg-and-flour step once more, and the batter will turn out much thicker.
Step 7
Heat vegetable oil in a skillet. You can use any vegetable oil: corn, sunflower, or olive oil will all work. But for frying in a skillet, always use refined oil so it does not burn. Place the coated liver pieces into the skillet. Fry for about 7 minutes on each side.

The liver turns out juicy inside with a crispy crust on the outside. Enjoy your meal!
