Fried Chicken Fillet with Onions in a Skillet
Juicy, very tasty - perfect for a celebration or everyday meal! Fried chicken fillet with onions is easy to make, yet looks festive. The breasts turn out tender and absorb the vegetable sauce beautifully, pairing well even with dry side dishes.

Preparation
Step 1
You can use regular or cherry tomatoes. If possible, use bell peppers of different colors - this makes the finished dish brighter and more appealing.
Step 2
Rinse the chicken breasts and pat them dry with paper towels. Slice each breast lengthwise to make thinner fillets. Lightly salt each piece.
Step 3
Cut the bell peppers in half and remove the seeds and core. Peel the onions. Wash and pat all vegetables dry to remove excess moisture.
Step 4
Slice the onions into thin half-rings or rings. Cut the bell peppers into thin strips or half-rings as well.
Step 5
Heat vegetable oil well in a thick-bottomed skillet over medium-high heat. Add the chicken fillets and fry until golden brown on one side, then flip and fry the other side until browned - about 7 minutes per side.
Step 6
Remove the fillets to a separate dish. In the same skillet, add the onions and bell peppers. Lightly salt and fry, stirring occasionally, until the vegetables are soft.

Meanwhile, cut the tomatoes into wedges. If using cherry tomatoes, leave them whole or cut in half.
Step 8
When the vegetables are ready, place the chicken breasts on top. Add the tomatoes, sprinkle with ground peppers, and add your favorite dry herbs - basil, oregano, Provence herbs, etc. You can also use garlic powder. Cover the skillet and let the chicken simmer over low heat for about 10 minutes. After 1-2 minutes, check if there’s enough liquid from the tomatoes.

If the sauce is too dry or the vegetables start to stick, add 4-5 tablespoons (about ¼ cup) of water. Before serving, spoon some of the vegetable sauce over each chicken piece. Sprinkle with fresh herbs and red onion rings if desired.
