Fresh Yeast Dough
Soft, tender, pliable, and pleasant to work with. Making dough with fresh yeast is not difficult at all. You will need only the simplest and most affordable ingredients. This dough rises quite quickly, so in just an hour you can start shaping filled pastries from it.

Step 1
How do you knead yeast dough with fresh yeast? Prepare all the necessary ingredients. When buying yeast, pay attention to the expiration date. It should be stored in the refrigerator. Color and smell are also very important: good fresh yeast has a creamy color and a mild, unobtrusive aroma. If you run a finger over it, the surface should remain dry and not crumble. You can use either sunflower oil or olive oil, if desired.

Heat the water to 35-40°C (95-104°F). If you do not have a kitchen thermometer, the correct temperature can easily be checked by hand: place a drop of water on the inside of your wrist. If it feels pleasant, neither cold nor hot, then the temperature is right. At 45°C (113°F), yeast already starts to feel uncomfortable and works more slowly, and at 50°C (122°F) it begins to die. So the most important thing when working with dough is not to kill the yeast right at the start.
Step 3
Pour the warm water into a deep bowl, add the sugar, and crumble in the yeast. Stir everything thoroughly until the yeast has completely dissolved.
Step 4
Sift the flour into the bowl with the yeast, add the salt and vegetable oil. Thanks to sifting, the flour will be enriched with oxygen, and the dough will turn out more tender, while the finished baked goods will be softer and fluffier.
Step 5
Knead a soft dough. At first, you can mix everything with a spoon, and then, as it thickens, knead it by hand. If you have a food processor or mixer that can knead dough, you can use that as well. Knead the dough for about 7 minutes until all the ingredients are fully combined. At first it will stick to your hands a lot, but gradually it will start pulling away from the sides of the bowl. If necessary, you can add 1-2 tablespoons of flour. The finished dough should be slightly sticky.
Step 6
Cover the dough with a towel and leave it in a warm place for 1 hour. This kind of dough rises very quickly, so there is no need to leave it longer.
