Preparation
Step 1
Heat the oil in a large saucepan, then add the onions, carrot, garlic, and celery. Cover and cook gently for 10 minutes, until the vegetables are soft.
Step 2
Stir in the chopped tomatoes and sugar, season with salt and pepper, and cook for another 5 minutes.
Step 3
Add the stock, bring the mixture to the boil, then simmer for 10 minutes.
Step 4
Transfer the soup to a blender and process until smooth. If using basil, stir it in just before serving.
