Step 1
How do you make fresh pumpkin salad? Prepare all the necessary ingredients. Start by making the dressing. In a sauce boat or any other convenient container, mix the olive oil, wine vinegar, and honey. The honey should be liquid, otherwise it will be difficult to combine with the other ingredients in the dressing. The vinegar can be replaced with any kind you have at home. The dressing is ready, set it aside for now, you will need it later.

Rinse the salad leaves under running water and shake off the excess moisture. Tear the leaves into small pieces with your hands. Of course, you can also use a knife for this. Do whichever is more convenient for you. Arrange the salad leaves on a serving plate.

Wash the carrot under running water with a brush and peel it. You will get the least waste if you peel the carrot with a vegetable peeler. I also used it to cut very thin carrot slices. Instead of a vegetable peeler, you can try slicing the carrot as thinly as possible with a knife. Place the sliced carrot on the plate over the salad leaves.

Wash the pumpkin under running water, carefully remove the tough skin, as well as the seeds and all the inedible inner parts. Using the same vegetable peeler, I made slices from the pumpkin too. Arrange the pumpkin slices on the serving plate. Sprinkle the salad with salt to taste.
Step 5
Wash the apple under running water and cut it into thin slices. Decorate the salad with them. Sprinkle the dish with pomegranate seeds and pour over the dressing prepared earlier with olive oil. The salad is ready. Toss it before eating. Garnish the salad with mint leaves. Enjoy your meal!
