Step 1
How do you cook fresh cabbage soup with turkey? Prepare all the necessary ingredients. You can use any part of the turkey. This time I used the shoulder.
Step 2
First rinse the turkey meat, place it in a pot, and cover it with cold water, about 1.5 liters, about 6 1/3 cups. I also added half an onion, a piece of carrot, a piece of bell pepper, and a bay leaf to the broth. Place the pot over high heat. When the water comes to a boil, reduce the heat to low and simmer the broth for about 1 hour, skimming off the foam from time to time. Keep the heat low so the water does not boil too vigorously, which will help keep the broth clear.
Step 3
Meanwhile, prepare the vegetables. Wash and peel them. Cut the potatoes into thin strips, cover them with water, and set aside.
Step 4
Grate the carrot on a coarse grater.

Cut the onion into medium-sized cubes.

Shred the cabbage into thin strips.

Cut the bell pepper any way you like.

Make a cross-shaped cut on the tomato and pour boiling water over it. This will make the skin come off easily.

Cut the tomato flesh into medium-sized cubes.

Prepare the vegetable base. Melt the butter in a skillet and add the cabbage, carrot, and onion. Cook the vegetables, stirring, until soft.

Add the sliced potatoes, bay leaf, and pepper to the finished broth. Cook until the potatoes are tender, about 10-15 minutes. Remove the meat.
Step 12
Add the cooked cabbage with carrot and onion, the bell pepper, and the tomato to the broth. Salt to taste. Remove the bay leaf. Cook for about 10 more minutes. Shred the meat and return it to the broth. Turn off the heat, cover the pot with a lid, and let the soup rest for at least 10-15 minutes. That will make it especially rich and aromatic.

Fresh cabbage soup with turkey can be served with sour cream and sprinkled with dill or parsley. Those who like it can also add green onion. Enjoy your meal!
