Fresh Cabbage Soup with Canned Fish
Quick, simple and inexpensive, this fresh cabbage soup can be made with almost any canned fish in oil, its own juice or tomato sauce. Changing the fish gives the soup a slightly different flavor each time.

Preparation
Step 1
Prepare all the ingredients. You can use almost any canned fish in oil, its own juice or tomato sauce. The original recipe uses sprats in tomato sauce.
Step 2
Peel the potatoes, onion and carrot.
Step 3
Cut the potatoes into small cubes and place them in a pot. Pour in about 6⅓ cups of water or slightly more and bring to a boil over high heat. Reduce the heat, cover and cook the potatoes until half tender, approximately 10 minutes.
Step 4
Meanwhile, prepare the sautéed vegetables. Finely chop the onion and coarsely grate the carrot. Heat neutral vegetable oil in a frying pan.
Step 5
Cook the onion and carrot, stirring frequently, until golden.
Step 6
Add the tomato paste and mix well. You can replace it with fresh tomatoes, ketchup or tomato juice.
Step 7
Cook everything together over low heat for another 5–7 minutes.
Step 8
Remove any damaged outer leaves from the cabbage and shred it into thin strips.
Step 9
When the potatoes are almost tender, add the fresh cabbage to the pot and increase the heat.
Step 10
Add the sautéed tomato and vegetable mixture to the soup. Stir and simmer for approximately 5 minutes.
Step 11
Near the end of cooking, add the canned fish. If the pieces are large, break them into smaller chunks with a fork beforehand. Season with salt to taste and cook for another 3–5 minutes.
Step 12
Add the bay leaf.
Step 13
Finely chop the fresh herbs. Dill or green onions work especially well. Add the herbs and finely chopped garlic, if using, to the soup. Simmer for approximately 1 minute, then remove from the heat.
Step 14
Serve the fresh cabbage soup with canned fish hot, offering ground black pepper on the side.
