Fresh Cabbage, Carrot and Cucumber Salad
Light, tasty, simple, summery fresh and full of vitamins! You can make this fresh cabbage, carrot and cucumber salad. Serve it any time of day - as a snack, light breakfast or dinner. It goes perfectly with fried or baked meat, chicken or fish.

Preparation
Step 1
Remove the outer 2-3 leaves from the cabbage. Rinse the cucumber to remove any dirt. Peel the carrot and rinse it.
Step 2
Finely shred the fresh cabbage with a sharp knife and lightly squeeze it with your hands. This makes the cabbage softer and juicier in the salad.
Step 3
Transfer the shredded cabbage to a bowl where you will prepare the salad. Cut the cucumber in half lengthwise and slice it into half-moons. If the cucumber is large, first cut it lengthwise into 4 parts. Add the sliced cucumber to the cabbage.
Step 4
Grate the peeled carrot on a coarse grater and add it to the bowl with the salad.
Step 5
Dress all the ingredients with a little vegetable oil and lemon juice.
Step 6
Add salt and sugar to taste. I like this salad with a light sweetness, so I add a bit more sugar than salt. You can also add some salad seasoning or ground pepper - adjust to your own taste.
Step 7
Mix all the ingredients so the dressing is evenly distributed over the vegetables. If you like, add some chopped fresh herbs. Transfer the finished salad to a serving bowl and serve. It is an excellent side dish for meat dishes, especially grilled meat. Enjoy!
