French-Style Pork with Tomatoes
Even over the years, this dish has not lost its popularity. Pieces of meat with juicy vegetables under a cheese crust are exactly what you need for a festive gathering or a simple family lunch. Best of all, you can make a large batch at once and solve lunch or dinner for the next day.

Preparation
Step 1
Prepare all the ingredients needed for the dish. The pork can be used as a whole piece, for example ham, pork loin, or neck, depending on how fatty you want the slices to be, and then cut into the needed pieces. Or you can buy ready-cut pork chops or entrecôte. You will need 5 slices. French-style meat is also often made with onion cut into half-rings. I do not add it, but you can.
Step 2
Wash the meat, pat it dry, and cut it into slices about 5-7 mm thick, about 1/4 inch. Pound each slice with a meat mallet until it becomes about the size of your palm. Do not pound it too hard, so the meat keeps its shape and does not get holes through which the mayonnaise could run out.
Step 3
Season the meat with salt and pepper.

Wash the tomatoes, cut them in half, and slice them into not too thick half-moons. For this recipe, it is best to choose firm, meaty tomatoes that are not too watery.
Step 5
Grate the cheese on a coarse grater. A simple fermented cheese or another good melting semi-hard cheese works well here.
Step 6
Place the pork slices into a baking dish greased with vegetable oil, or onto a baking sheet lined with parchment paper. I recommend using greased parchment, the mustard-colored kind, because the meat will not stick to it. Brush the pork first with vegetable oil and then with mayonnaise. If you are using onion, slice it into half-rings and place it over the mayonnaise.

Next, arrange the tomato half-moons, overlapping them like roof tiles.
Step 8
Sprinkle everything with the grated cheese. Put the French-style meat into an oven preheated to 180°C (350°F) on the middle rack for about 40 minutes. The exact time depends on your oven. The cheese on top should become nicely browned.
Step 9
The level of browning depends on your preference. I like it all the way to a crisp crust, so I left the meat in the cooling oven for another 10 minutes. Enjoy your meal!
