French-Style Meat with Potatoes and Mushrooms

Preparation
Step 1
What meat works best? Beef or pork both work well. Use any firm cheese. Mayonnaise can be replaced with sour cream or mixed 50/50.
Step 2
Rinse the meat and pat dry. I used pork (neck cut). Slice into medium, even pieces. Place the meat in one layer in a baking dish. Season with salt and black pepper.
Step 3
Peel the onion and slice it into thin rings or half-rings. Spread the onion over the meat.
Step 4
Rinse mushrooms, pat dry, and slice them thinly. Heat a little vegetable oil in a pan and sauté the mushrooms until lightly golden.
Step 5
Spread the mushrooms evenly over the meat and onions.
Step 6
Peel the potatoes. Slice them into 2-3 mm rounds and lay them over the mushrooms in a thin layer. If all potatoes don’t fit, layer them: spread a little mayonnaise over the first layer, lightly salt, then add another layer. Salt to taste.
Step 7
Spread mayonnaise over the potatoes. You may need more or less depending on preference. At this stage you could add cheese and bake, but the potatoes often don’t cook through, while the cheese overbakes and hardens. A better method: place the dish (meat + mushrooms + potatoes + mayo) in the oven for 30 minutes.
Step 8
Then sprinkle with coarsely grated firm cheese. Slice tomatoes thinly and place them on top. Return the dish to the oven and bake until the potatoes and meat are fully cooked and the cheese is golden - about 30-40 minutes.
