French Cheese Puffs
Delicious cheese puffs in the best French tradition. These choux pastry buns with cheese are tasty with tea, coffee, or simply with milk. You can eat them just as they are, or fill the hollow center with cream or another filling for a wonderful appetizer on a festive table.

Preparation
Step 1
How do you bake French cheese puffs? Prepare all the necessary ingredients. You can use any hard cheese, but the flavor of the buns will depend on the type of cheese. Do not use large eggs, because the dough will turn out too runny. Size C1 eggs will be just right.
Step 2
Pour the milk and water into a saucepan, then add the butter and salt.
Step 3
Place the saucepan over medium heat and bring to a boil, stirring until the salt and butter are completely dissolved.
Step 4
Reduce the heat to the lowest setting and slowly add the sifted flour, stirring quickly. Continue stirring vigorously until the dough cooks and turns into a dense, smooth mass. This will take about 2–3 minutes.
Step 5
Remove from the heat and continue stirring until the dough cools enough that it no longer burns to the touch. This is needed so the eggs do not cook when added to the dough.
Step 6
Once the dough has cooled, start adding the eggs, strictly one at a time; otherwise, you will not be able to make the dough properly. Add one egg and mix thoroughly until smooth. At first it will be a little difficult, but with each added egg it will become easier.
Step 7
Add the second egg and mix thoroughly as well.
Step 8
Add the third egg to the dough and mix thoroughly again. In general, choux pastry really likes thorough mixing. This gives it the right consistency, which means the finished pastries will turn out well.
Step 9
Add the last egg and knead the dough well one final time. It should not be runny or very thick. If it slowly flows from the spoon in a large ribbon, it is ready. Preheat the oven to 180°C / 356°F.
Step 10
Grate the cheese on a fine grater and add it to the dough, setting a little aside for later.
Step 11
Mix well until the cheese is evenly distributed throughout the dough.
Step 12
Line a baking sheet with baking paper or a silicone mat. Using a spoon or a piping bag, place equal-sized buns on the sheet, leaving 2–3 cm / about 1 inch between them, as they will increase in size during baking.
Step 13
Sprinkle the tops of the buns with grated cheese.
Step 14
Before baking the buns, remember one rule: under no circumstances open the oven door during the first 25 minutes, and ideally not until they are fully baked. If you open the door suddenly, the buns will collapse. Place them in the hot oven and bake at 180°C / 356°F for about 30–40 minutes, until golden brown. The baking time may vary.
Step 15
Remove from the oven, let cool, and serve.
