French apple tart
A rustic French-style apple tart made with crisp puff pastry, smooth apple puree, and beautifully fanned fresh apples. Golden, elegant, and delicious - perfect for showcasing simple ingredients at their best.

Preparation
Step 1
Preheat the oven to 200°C.
Step 2
Roll the puff pastry out on a clean work surface to a large sheet about 3mm thick. Using a bowl or plate, cut out a 25cm/10in circle. Crimp the edge, then flip the pastry over and place it directly onto a flat baking tray. Chill in the fridge for at least 10 minutes.
Step 3
Remove the chilled pastry from the fridge and spread the apple puree evenly over the base, leaving a 1cm/½in border around the edge.
Step 4
Slice the apples to the thickness of a coin and arrange them on the pastry, fanning them out in overlapping layers. Start from the outside and work inward, using the largest slices around the edge and the smallest in the centre.
Step 5
Once the apples are arranged, sprinkle with caster sugar and dot with cubes of butter. Brush the pastry border with beaten egg and bake for about 30 minutes, or until the edges are risen and golden-brown.
Step 6
When ready to serve, transfer the tart to a serving plate and enjoy warm or at room temperature.
