Preparation
Step 1
Rinse the fonio thoroughly under running water, then transfer it to a medium-sized pot.
Step 2
Pour in the almond milk and place the pot over low heat. Let the fonio simmer gently for 30-35 minutes, stirring continuously to prevent sticking and to help the grains cook evenly. Continue cooking until the grains are tender and have fully absorbed the milk.
Step 3
Once the fonio is cooked, stir in the salt and mix well.
Step 4
Serve the fonio warm, topped with your choice of fresh fruits, nuts, and a drizzle of maple syrup or another sweetener if desired.
