Step 1
How to make fluffy dough with dry yeast and kefir? Prepare the ingredients. Sift the flour through a sieve in advance to aerate it. This helps the dough rise better and makes the baked goods puffier and lighter.
Step 2
Warm the kefir to 34-38°C (93-100°F). In a warm environment, yeast works more actively. You can warm kefir in the microwave, but be careful not to curdle it: heat in 5-7-second bursts, stirring each time. Pour the warm kefir into a large bowl and add dry yeast, sugar, and salt. Mix well.

Next, pour in the vegetable oil. Gradually add the sifted flour and knead the dough. You may need a little more or less flour than stated - go by the dough’s consistency.
Step 4
At the beginning, it’s convenient to mix the dough with a wooden spatula. As you work, the dough will become thicker.
Step 5
The finished dough is tender, soft, and pliable. Cover the bowl with a towel and place it in a warm spot for 1 hour to rise.
Step 6
In warmth, the dough increases in size quickly. Punch the risen dough down and start shaping your baked goods.
Step 7
You can use any filling - sweet or savory. Let the shaped pastries rest on the table for 10-15 minutes.

Then you can fry them in vegetable oil or bake them in the oven. I make fried pastries. If you bake them, brush the tops with egg yolk so they brown nicely.
