Fluffy Yeast Buns with Streusel Crumbs
Soft, airy and generously covered with sweet buttery crumbs! These rich yeast buns have a tender kefir dough and a fragrant crumb filling. Their decorative twisted shape makes them perfect for serving with tea or coffee.

Step 1
Prepare all the ingredients required for the yeast buns and streusel crumbs.

Pour 8.8 oz of room-temperature kefir into a measuring jug. Crumble in 0.75 oz of fresh yeast.

Add ½ cup of sugar.
Step 4
Add 3 tablespoons of flour and mix well.
Step 5
Place the jug with the yeast mixture in warm water and leave it for 20 minutes to activate.
Step 6
Crack 2 eggs into a large bowl.
Step 7
Add 3½ tablespoons of softened butter.
Step 8
Add 1 teaspoon of vanilla sugar.
Step 9
Add ⅓ teaspoon of salt.
Step 10
Whisk the ingredients until evenly combined.
Step 11
After 20 minutes, pour the well-risen yeast mixture into the bowl with the eggs and butter. Mix thoroughly.

Gradually sift approximately 4½ cups of flour into the bowl.

Begin mixing the dough with a whisk.

Continue kneading the dough by hand until it comes together into a ball.

Lightly dust the work surface with flour and transfer the dough onto it.

Knead thoroughly by hand for about 7 minutes.

Drizzle the dough with a little vegetable oil and coat it lightly. Place it in a bowl, cover with a clean towel and leave to rise in a warm place for 1 hour.

To prepare the streusel mixture, place 1¼ cups of flour in a bowl.

Add ¾ cup of sugar.

Add 7 tablespoons of softened butter.

Mix until fine buttery crumbs form. Cover the bowl and refrigerate.

After 1 hour, transfer the well-risen dough from the bowl to the work surface.

Gently deflate the dough, knead it briefly and shape it into a thick log.

Divide the dough into 12 approximately equal pieces.

Shape each piece into a smooth ball and cover with a clean towel.

Working one at a time, flatten and roll each dough ball into a small oval or rectangle.

Spread a suitable amount of the prepared streusel mixture evenly over each piece of dough, reserving some crumbs for the tops.

Gently press the filling into the dough and roll each piece into a log.

Pinch the long edge and both ends of each roll firmly closed.

Gently flatten each roll. Cut it lengthwise through all the layers, but leave one end attached so the 2 strips remain connected.

Twist the 2 cut strips into spirals.

Join the ends, then twist the strips together into one larger spiral.

Tie the twisted dough into a loose knot to form a bun.

Line a baking sheet with parchment paper. Arrange the shaped buns on it, cover with a towel and leave to rise for 20 minutes.

Brush the risen buns with beaten egg yolk.

Generously sprinkle the reserved streusel crumbs over each bun.

Bake in an oven preheated to 350°F for 20 minutes. Turn off the oven and leave the buns inside for another 5 minutes.
