Fluffy Tender Oven-Baked Cottage Cheese Pancakes (No Flour, No Oil)
A recipe for amazingly tender, airy oven-baked syrniki. People who follow balanced eating principles will appreciate it: there’s no flour, no oil, they’re not fried - only baked. That means fewer calories, so you don’t have to worry about gaining weight.

Preparation
Step 1
Take a deep bowl and mix the cottage cheese, sugar, eggs, and vanilla sugar (or vanilla). Mix well, trying to make the mixture as smooth as possible. You can use more or less of the ingredients depending on your taste - in my household, the amount given in the recipe is eaten in a couple of tea-time sittings.
Step 2
Add the sour cream, baking powder, and semolina to the cottage cheese and egg mixture. Mix well again. I don’t use a mixer - I just stir everything thoroughly with a spoon - but you can use a mixer if you prefer.
Step 3
Let it rest for about 10 minutes so the semolina can swell slightly. Meanwhile, turn on the oven and preheat it to 180-200 °C.
Step 4
Divide the cottage cheese mixture among the molds. I use fairly large silicone muffin molds and fill them about 2/3 full, as the mixture rises nicely while baking. Bake in the oven for about 40 minutes. Some ovens may need a little more or less time, so adjust accordingly.
Step 5
Once the time is up, remove the golden, fluffy cottage cheese muffins and let them cool slightly in the molds. Then take them out while still warm, dust with powdered sugar, and serve with tea.
