Step 1
Prepare all the ingredients. They should all be at the same temperature, so take the cottage cheese and egg out of the refrigerator in advance. What kind of cottage cheese should you choose? Use a richer cottage cheese so the pancakes turn out more filling. The ideal fat content is 9-19%. If your cottage cheese is grainy, press it through a sieve or blend it with an immersion blender so it becomes smooth.

Add the egg to the cottage cheese and mix well. For a 200 g package of cottage cheese, the smallest egg, for example size S, works perfectly. If you only have large eggs, add only the yolk. If you increase the number of portions, add the eggs one at a time, mixing after each addition. Go by the consistency of the batter. It should not be too runny. The exact amount of egg depends on the moisture of the cottage cheese and the size of the eggs.
Step 3
Add salt and sugar. Add 2 tablespoons of semolina. Mix and leave the mixture for about 10 minutes so the semolina can swell. The batter will become thicker because the semolina absorbs the moisture. If the batter still seems too runny, add a little more semolina and leave it again to swell.
Step 4
First, mix the remaining semolina and flour on a plate. Shape the cottage cheese batter into pancakes and coat them in the flour and semolina mixture.
Step 5
Heat vegetable oil in a thick-bottomed skillet, place the pancakes in it, and lower the heat to just below medium. Fry the pancakes for about 10 minutes on one side. Then carefully turn them over, lower the heat to minimum, and cook until done. You may need to cover the skillet with a lid. The exact cooking time will depend on the size of the pancakes and on your stove and skillet.

Warm, fluffy cottage cheese pancakes are traditionally served with sour cream, jam such as raspberry or strawberry, honey, sweetened condensed milk, or fresh berries.
